Whitestone Cheese Marinated Pan-fried Garlic Halloumi

Ingredients:
400g (2 packs) Ferry Road Halloumi cut into thick slices (approx. 2cm depth)
2 finely chopped cloves of garlic
2 Tbs chopped fresh basil (or pesto)
60g sliced sun-dried tomatoes
1 cup olive oil
Juice of 1 lime (for finishing)
Method:
Place ingredients apart into a shallow dish, cover and marinate overnight.
Pan fry the Halloumi slices until brown and crispy on the outside.
Finishing / serve with:
Arrange cooked Halloumi on fresh bread or green salad, spoon marinade on top and drizzle with lime juice to serve.
