Kiwi Cheese Rolls

Is there anything more Kiwi than Cheese Rolls? They are perfect to serve during winter to accompany tomato soup or as a lunch or light dinner by themselves. What’s more cheese rolls freeze well and are the ideal ‘go to’ snack, just pull out a couple and put them straight into the sandwich press.

Preparation time - 20 mins
Cook time - 15 mins
Serves 20

Ingredients

  • 1 can reduced cream

  • 1 packet onion soup

  • 1 cup grated NZ tasty cheese

  • 1 loaf sandwich bread

  • Butter or margarine

Method

  • Mix 1 can of reduced cream and onion soup in a bowl. Add grated cheese and mix through.

  • If you don't like crusts on bread, cut them off now - this is optional. Spread each slice with butter or margarine.

  • Spread two-thirds of the unbuttered side with one heaped dessert spoonful of cheese mix. Roll up tightly so filling doesn’t spill out.

  • Place on a baking tray and bake at 180°C oven for 12 to 15 minutes or until golden brown.

  • When they come out of the oven, lather in NZ butter and sprinkle with salt.

  • Allow to cool before serving.

Cook’s Tips

If you’re feeding a crowd, assemble ahead of time and keep covered with a damp tea towel or in a large plastic container in the fridge ready for cooking as required.

Make them a little boujee by serving with a chutney, or replacing the butter topping with garlic butter and chopped parsley.

An alternative is to change the reduced cream to evaporated milk. Put the evaporated milk into a pot, stir in onion soup mix and simmer while continuously stirring. When the mix thickens slightly, add grated cheese and continue to mix until melted. Take this off the heat and chill mix. When chilled, wrap into bread as usual.
